The Secret of the Wild Fennel Version

The wild fennel version represents a precious variation of the Palermo tradition. Wild fennel , a wild plant that grows in the Sicilian countryside and mountains, is harvested in spring and dried to preserve its aromatic properties.

In our recipe, dried fennel is added directly to the pan while toasting the breadcrumbs and toasted along with the breadcrumbs. This process allows the fennel's essential oils to blend perfectly with the breadcrumbs, releasing a more intense and integrated aroma than if simply added cold. The result is a muddica atturrata with an unmistakable aroma, capable of transporting you directly to the scents of the Mediterranean scrub.
