Obtained from the twice cooked whey ("Ri-Cotta"), salted ricotta undergoes a slow natural dehydration process that eliminates 80% of the liquids, giving you a unique product to grate. Unlike traditional cheeses, it is without preservatives or additives , made only with genuine ingredients and milk from pasture-raised sheep.
